The Land
The Zarcero region was originally renowned for its dairy heritage, but producer Maria Elena Castro made a visionary leap into specialty coffee. The farm, Finca La Salaca, sits at a breathtaking 1,750 meters, embracing cool Pacific breezes and nutrient-rich volcanic soil. This unique terroir provides a sanctuary for the coffee cherries to mature at a slow, graceful pace, weaving a narrative of crystalline acidity and profound sweetness within every bean.
The Process
The H1 variety is a masterpiece of modern coffee science, blending the radiant flavors of the Ethiopian wild landrace Sudan Rume with the resilience of Sarchimor. At the Monte Brisas micro-mill, established in 2011, the family oversees a precise Washed process with meticulous care. This refinement reveals a coffee as clear as a polished gemstone, unfolding with an elegant floral bloom and a dense, succulent mouthfeel that captures the essence of ripe fruit.
Roast Profile
Developed for both Filter and Espresso to amplify the vibrant flavors clarity and the sophisticated, creamy finish that lingers on the palate.
